Quick & Easy Chicken Feast
Starter: Simple Cucumber & Tomato Salad
Ingredients:
• 1 cucumber, sliced
• 1 cup cherry tomatoes, halved • 1 tbsp olive oil
• 1 tbsp lemon juice
• Salt and pepper
Instructions:
1. Toss the cucumber and tomatoes in a bowl.
2. Drizzle with olive oil and lemon juice. Season with salt and pepper.
Main Course: Garlic and Herb Grilled Chicken Breasts
Ingredients:
• 4 chicken breasts
• 2 tbsp olive oil
• 2 garlic cloves, minced
• Fresh rosemary and thyme (a handful) • Salt and pepper
Instructions:
1. Rub the chicken breasts with olive oil, garlic, rosemary, thyme, salt, and pepper.
2. Grill the chicken over medium-high heat for 6-7 minutes per side, until fully cooked.
Side Dish: Roasted Potatoes
Ingredients:
• 4 large potatoes, diced • 2 tbsp olive oil
• 1 tsp paprika
• Salt and pepper
Instructions:
1. Toss the diced potatoes with olive oil, paprika, salt, and pepper.
2. Roast in the oven at 400°F (200°C) for 20-25 minutes until crispy and golden.
Dessert: Vanilla Yogurt with Fresh Berries
Ingredients:
• 1 cup vanilla yogurt
• 1/2 cup fresh berries (strawberries, blueberries, raspberries) • 1 tsp honey (optional)
Instructions:
1. Serve the yogurt in small bowls, topped with fresh berries. 2. Drizzle with honey if desired.
Drink: Iced Lemon Tea
Ingredients:
• 2 cups brewed black tea, chilled • Juice of 1 lemon
• Ice cubes
• Lemon slices for garnish
Instructions:
1. Pour chilled tea into glasses with ice cubes.
2. Add lemon juice and garnish with lemon slices.
