• 2 fillets of white fish or salmon (e.g., sea bass or cod) • 2 tbsp olive oil

Ingredients:
• 4 salmon fillets
• 2 tbsp olive oil
• 2 garlic cloves, minced
• 1 tbsp Dijon mustard
• 1 tbsp honey
• Fresh dill (optional)
• Salt and pepper
• 2 carrots, cut into sticks
• 1 zucchini, sliced
• 1 red bell pepper, chopped
• 1 tbsp olive oil
• Salt and pepper for seasoning
Instructions:
1. Preheat oven to 400°F (200°C).
2. In a small bowl, mix olive oil, garlic, mustard, honey, dill, salt, and pepper. Brush the salmon fillets with the mixture.
3. Arrange the salmon on a baking tray lined with parchment paper. Surround with the vegetables tossed in olive oil, salt, and pepper.

• Fresh mint leaves • Sparkling water
Instructions:
1. In a jug, combine the orange juice, lemon juice, honey, and mint leaves. Stir well. 2. Fill glasses halfway with the juice mixture and top off with sparkling water.
3. Garnish with mint leaves and orange slices.
